Structure-modifying ultrasound and pH shifting processes are applied to treat soy, pea, mung bean, oat, and hemp proteins. Disruptions of compact native structures and dissociation of subunit complexes by cavitation and deprotonation led to substantial improvements of protein solubility, foaming capacity, and emulsifying properties.
