Dr. Fernanda Dias is a postdoctoral researcher at the University of California in Davis, California, USA. She obtained her bachelor’s degree with honors in Food Engineering (2012) from the University of Campinas, Sao Paulo, Brazil (UNICAMP), where she also received her Ph.D. in Food Science in 2017 under the supervision of Professor Helia Sato. After a brief stint as a postdoctoral scholar in the UNICAMP Chemistry department with Leandro Hantao, she joined Professor Juliana Bell’s Laboratory as a postdoctoral scholar with the University of California, Davis Department of Food Science and Technology. Her current research focuses on the development of environmentally friendly strategies to simultaneously extract and fractionate oil and protein from plant-based sources. Her other research interests include lipid characterization and lipidomics approaches for assessing oil quality.
