Dr. Stull is an Associate Professor of Nutrition Sciences and Registered Dietitian Nutritionist in the Department of Human Sciences and Design at Baylor University in Waco, TX. Her research interests are focused on polyphenol-rich foods and other functional foods, and their effects on the risk factors associated with metabolic syndrome (i.e, pre-diabetes, obesity, and hypertension). She is an active member of the Academy of Nutrition and Dietetics and the American Society for Nutrition (ASN). Currently, she serves on the Editorial Board of the Journal of the Academy of Nutrition and Dietetics and also she is a Fellow of the Academy of Nutrition and Dietetics (FAND). Dr. Stull is passionate about making the field of nutrition more diverse and inclusive and currently serves on the Minority and Diversity Affairs Committee (MDAC; 2015-Present; Chair, 2017-2018). Recently, she was elected to the ASN Board of Directors as the Treasurer-Elect and continues to serve on the Finance and Audit Committee (2016-Present). Dr. Stull was honored to receive the 2021 ASN Volunteer of the Year Award along with her MDAC colleagues. Additionally, she has served as the Chair of the Early Career Nutrition Interest Group (2013-2014).
