AJ Fusco is a firefighter in Hamilton, NY and a firehouse chef with a culinary education and experience working busy NYC kitchens. He works with O2X Human Performance to motivate tactical athletes to get in the kitchen and cook meals that are healthy and delicious. AJ’s goal is to foster a community of firehouse cooks, sharing meals and recipes from all over the world, with a focus on healthier cooking. A.J. loves to take traditionally unhealthy dishes popular in the firehouse and recreate them with a nutritious twist.
AJ is a graduate of the International Culinary Center in Manhattan and did so as the Top of the Class. Upon graduating, he went on to work at White Gold Butchers, a whole animal butcher shop and restaurant in Manhattan. AJ worked as a line cook and moved his way up to butcher’s apprentice, where he learned the art of butchery. After his daughter was born, AJ took a job cooking at Pizzeria La Rosa, an Italian restaurant closer to home in Westchester County, NY. Here he expanded upon the Italian-American dishes he grew up with, only this time in a 100 year old wood fired oven.
In 2017, AJ 's dedication to firehouse cooking landed him on Food Network’s Guy’s Grocery Games twice, and on his first show he won the first ever Salute to Firefighters episode! Part of his winnings went towards sponsoring a 555 Fitness grant, which included not only fitness equipment but also kitchen equipment to the Williamsport Fire Dept. AJ is also the founder of Fork and Hose Co. a social media based healthy cooking community for firehouse chefs from all over the globe.
AJ loves taking the knowledge and skills he has learned in professional kitchens, and passing them along in hopes of inspiring others.
